Rolling Smoke BBQ prides itself on authentic down-home BBQ with an emphasis on Southern style home cooking. Owner Terry Walsh has been making BBQ in his backyard for years, and after many years of praise for his delicious smoked meats he decided to share the love of good BBQ and open up a food truck for all of Colorado to enjoy. His Oklahoma roots and his love for BBQ has led him on a personal quest for slow-smoked perfection. Over the years he has mastered the technique of just the right amount of wood and smoke, and just the right amount of seasoning to bring you the best BBQ you have ever had in your mouth. Our slogan is “We Smoke It All” and we aren’t kidding. From the Ribs, Brisket, and Pulled Pork to our homemade Mac & Cheese and Baked Beans. We make every side from scratch daily and take our time to slow-cook everything to perfection. A tradition that Terry has perfected over time.
